Devonshire Clotted Cream

Serves: 1¼ - 1½ cups

True Devonshire Cream, or Clotted Cream, is a very thick, rich cream actually very similar to butter. It pairs very well on scones with jam or jelly. Although sweetened a little, these homemade substitutions are very good with all scone recipes as well.
  • 1 Cup Heavy Cream
  • ¼ Cup Confectioner's sugar
  • ½ Tsp. Cream of Tartar
  • 1 Tsp. Vanilla Extract
  • or
  • 1 Cup Heavy Whipping Cream
  • ½ Cup Mascarpone or ¼ Cup Cream Cheese (softened)
  • 1 Tbsp. Sugar
  • 1 Tsp. Vanilla Extract
  1. Combine all ingredients in a medium bowl and beat with a mixer until stiff.
  2. Keep refrigerated for 3-4 days.
