Blueberry Muffins

Serves: 1 dozen

Great addition to brunch or morning tea.
Ingredients
  • 2 cups flour
  • ⅓ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup fresh blueberries
  • 1 egg
  • 1 cup half and half
  • ¼ cup melted butter
  • ¼ cup apple sauce
Instructions
  1. In large bowl, combine flour, sugar, baking powder and salt. Add blueberries. In another bowl beat egg, half and half, and apple sauce. Stir in melted butter. Mix with dry ingredients.
  2. Fill paper lined muffin cups two thirds full.
  3. Bake at 400 degrees for 20-25 minutes
  4. Serve warm
