Roasted Tomato Finger Sandwiches
A savory little recipe for a warm and welcoming tea table
Ingredients
. 8 slices soft white bread
. 2 medium Roma tomatoes, roasted and cooled
· 4 oz cream cheese, softened
· 2 tablespoons mayonnaise
. 1 tablespoon finely chopped fresh basil
· 1 teaspoon chopped chives
· Salt and pepper to taste
. Soft butter, for spreading on bread
Directions
1. Roast the tomatoes until tender and lightly caramelized, then cool and pat dry.
2. In a small bowl, mix cream cheese, mayonnaise, basil, chives, salt, and pepper.
3. Lightly butter the bread slices. Spread the cream cheese mixture over four slices.
4. Arrange the roasted tomato slices evenly on top. Add the remaining bread slices.
5. Trim the crusts and cut into neat finger sandwiches or small rectangles.
6. Chill briefly before serving.

A lovely open‑face recipe for a sweet and welcoming tea table
Ingredients
8 slices soft white bread or cocktail bread
4 oz cream cheese, softened
2 tablespoons mayonnaise
1 teaspoon finely chopped fresh chives
1 teaspoon chopped fresh basil
Pinch of garlic powder
Salt and pepper to taste
2 to 3 Roma tomatoes, very thinly sliced
Soft butter for the bread
Fresh basil leaves, for garnish
Directions
In a small bowl, mix cream cheese, mayonnaise, chives, basil, garlic powder, salt, and pepper until smooth.
Lightly butter the bread and spread with the cream cheese mixture.
Cut the bread into neat tea‑sandwich rectangles or small rounds.
Pat the tomato slices dry with a paper towel.
Overlap several tomato slices in a short row, roll them gently into a rose shape, and place one tomato rose on each sandwich.
Garnish with a tiny basil leaf or a sprinkle of chives.
Chill briefly before serving.

A fresh and lovely recipe for an afternoon tea table.
Ingredients
8 slices soft white bread or 16 cocktail bread rounds
4 oz cream cheese, softened
2 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon chopped fresh basil
4 to 6 small romaine leaves, thinly sliced
2 Roma tomatoes, very thinly sliced and patted dry
Soft butter for spreading
Salt and pepper to taste
Fresh basil leaves, for garnish
Lovely served with hot tea, fruit, and sweet conversation.
Directions
In a small bowl, mix cream cheese, mayonnaise, chives, basil, salt, and pepper until smooth.
Lightly butter the bread and cut into small rounds with a biscuit or cookie cutter.
Spread the cream cheese mixture onto half of the bread rounds.
Top with a little romaine and one or two thin tomato slices.
Cover with the remaining bread rounds and press gently.
Garnish the platter with tiny basil leaves and chill briefly before serving.
