I don’t know about you, but I love fresh tomatoes. A fresh vine-ripened tomato doesn’t need a lot of help. Just slice them. Ripe juicy tomatoes with fresh herbs, makes a great summer salad, side dish or in sandwiches.
Even if you don’t have a garden, tomatoes from your local grocery store can be flavorful just by adding a special seasoning or dressing. A tomato sandwich sounds good right about now. Tomatoes are one of summer’s simple pleasures.
- 1-2 tomatoes
- fresh parsley or basil
- Slice tomatoes into 1/4 inch slices.
- Place on salad or serving plate with fresh parsley or basil.
- I like to serve at room temperature. I will add additional seasoning like lemon pepper or drizzle with a tablespoon of balsamic vinegar for a different taste for different meals.
