Corned Beef and Cabbage Time

This is a great meal and is especially perfect for St. Patrick’s day. Corned beef and Cabbage is a traditional St Paddy’s Day meal and is so easy to make. I prefer the ready-to-cook corned beef from Costco. It is sealed in a bag with the spices and juices ready to cook. Follow the instructions on the package.

Add your vegetables and of course the cabbage. Simmer it on the stovetop or in a slow cooker.

an easy and quick meal, great for St. Patrick’s Day

Be sure to rest the meat for about 10 minutes so it can firm up for better slicing. I like to plate up the corned beef with potatoes, baby carrots, and a wedge of cabbage and onion. This is also terrific with rye bread and Dijon mustard.

It is such a satisfying meal with leftovers and also great in sandwiches the next day.
